We are delighted to launch our new 2018 Accent Catering Chefs' Academy.

The Academy has been developed to enable our talented and passionate chefs of the future to learn the skills required to pass the new National Commis Chef Apprenticeship qualification. The Chefs' Academy is a unique opportunity for our delegates to fine tune their cooking skills, develop their career and set themselves on the road to success and promotion. Learning the core skills in their day to day work place whilst working alongside their talented chef mentor, each week they will focus on learning a new skill and developing them extensive and in depth curriculum. In addition to weekly focused learning they will also enjoy extensive off-the-job training in a series of masterclasses, visits to the farmers and producers of the quality ingredients used in the business and access to workshops led by experts in their field. On conclusion of the course, as part of their graduation, the apprentices will prepare a fine dining dinner for their clients, mentors and invited guests­­

 

As part of their exciting journey they will have the opportunity to:

 

  • Attend masterclass sessions including butchery, fishmonger, bread making, pastry and dessert techniques along with learning many additional culinary skills

  • Benefit from experienced chef mentors to guide and coach them

  • Learn from our very best professionals led by Paul Merry our Food Development Director

  • Work with a wide range of quality produce and visit a range of our suppliers

  • Learn how to source quality ingredients

  • Develop leadership skills in kitchen management 

  • Organise, plan and cost menus

  • Understand the importance of Food Safety and Health and Safety within the work place

  • Experience working in other great kitchens within the Company
