CoolCucumber Pickle

Ingredients

  • 2 Cucumbers, thinly sliced
  • 1 Small onion, thinly sliced
  • 1 tbsp Dill, chopped
  • 1 tbsp Table salt
  • 100ml Cider vinegar
  • 125g Sugar

Method

  1. Put the cucumber, onions and dill in a large bowl.
  2. Mix the sugar, salt and vinegar and pour over the vegetables (it will look dry at this stage).
  3. Cover and leave overnight for the juice to run out of the cucumber (you should end up with enough liquid to cover the vegetables).
  4. Put vegetables and pickling liquid into a jar with a lid.
  5. Once opened it must be stored in the refrigerator and eaten within 1 week.
